From Michelin Star to Comfort Food: Seth Stowaway's New Culinary Adventure

San Francisco’s culinary scene is about to get a delicious shake-up with chef Seth Stowaway’s latest project. After closing his Michelin-starred restaurant Osito, Stowaway is diving into a more casual dining concept that celebrates his Texas roots.
Set to open this fall in the former WesBurger space on Mission Street, Chicken-Fried Palace promises to bring hearty, comfort food with a refined touch. The restaurant will center around chicken-fried steak, a dish with deep German-Texan heritage that Stowaway is passionate about reimagining.
For those unfamiliar with this classic Southern dish, chicken-fried steak is essentially a schnitzel-style preparation that became a staple in Texas cuisine through German immigrant influences. Stowaway isn’t just stopping at traditional recipes, he’s planning innovative twists like a chicken-fried Reuben sandwich that’s sure to turn heads.
The new space will maintain much of WesBurger’s original layout, with a playful touch of “Dollywood-esque” pink wallpaper adding personality. Chef Cole Jeanes from Memphis will lead the kitchen, bringing expertise in Southern cooking and biscuit-making.
Beyond the main dishes, Stowaway plans to offer boozy and regular milkshakes, along with classic pie for dessert. The restaurant will also be delivery-friendly, making it accessible for San Francisco’s busy food lovers.
Parallel to this restaurant venture, Stowaway has also launched a private dining club offering exclusive weekly dinners for 10 guests and the opportunity to book private home cooking experiences.
While the project is still in its early stages, with paperwork yet to be finalized, food enthusiasts are already buzzing about this exciting new culinary destination in the Mission.
